Responsibilities:
· Arrives to work on time, in uniform, ready for their shift.
· Make yourself aware of any parties at the pool during your work week.
· Manage Kitchen in the absence of the Executive Chef
· Assists in creating all food menus and specials with the guidance of the Executive Chef
· Assists in conduct daily shift briefings with all Cooks.
· Maintains knowledge of local competition and general industry trends
· Assists in overseeing weekly and monthly inventories.
· Assists to control food waste and identify opportunities for improvement of food/labor costs.
· Helps to create a highly functional, teamwork-orientated back of house team.
· Take responsibility to rectify hazardous situations, reporting major areas of concern to your Chef.
· Over sees cook to make sure they are following recipes, prep, and are stocking stations properly
· Double checks cooks prep to ensure proper labeling, dating, and rotation of food products.
· Assists with proper meat butchery for al a carte as well as parties and banquets.
· Assists with cooking of soups as well as other sauces needed for day-to-day operation.
· Checks out cooks at end of shift tomake sure all closing duties are properly fulfilled.
· Resourcefully solve any issues thatarise and seize control of any problematic situation.
· Manage and train kitchen staff and assess staff’s performance.
· Comply with and enforce sanitation regulations and safety standards.
· Maintain a positive and professional approach with coworkers and customers.
